C3-Cabernet Sauvignon – 16.1% alc. This year’s Cab comes screaming right out of the bottle, with a deep ruby color and ripe plum and young peppercorn on the nose. But luckily the taste is the best part. Lush layers of berry, oak and green pepper coat the mouth right up front. It then leads into a mid-palate of graphite, cinnamon and vanilla and finally a lingering earthy, leathery finish with hints of nutmeg and anise. This wine has a big tannic structure making it even better with a year or two or three of further aging. Pick a course and this wine will make you happy – from aged cheese to a New York steak to a flourless chocolate cake.
